NOTE: IF DISH WASHER IS SUPPOSE TO USE SANITIZER, THE SANITIZER WAS FOUND NOT TO BE WORKING. THE FINAL TEMPERATURE WAS PAST 180, SO THE DISHES ARE GETTING SANITIZED BY HEAT. I WOULD PROBABLY HAVE IT LOOKED INTO SO THAT IT GOES BACK TO USING SANITIZER SOLUTION.
HACCP CONCEPT DISCUSSED: PROPER MECHANICAL DISH WASHING USING HEAT AS THE SANITIZING AGENT.
